The wines of the Aude
For more than 20 centuries, grecs, latins and occitans have used olive and wine as the foundation of their civilasations. At the begining of the mondialisation, Langudoc was selling his wine to the whole planet. But then surproduction happened and this has lead to a big crises in 1980 in which wine producters from Languedoc and the police found themselves to be in violent oppositions....This has now settled, wine producters have come back to their quality and cepages amelioration policies. And some of the wines from the Aude have now been appreciated and recognised as great quality wines.
We suggest you to stop on your way as you visit the country, you'll find many wine cellars where you can taste and buy if you like the wines from this terroir.
The 'Blanquette de Limoux' (my favorit one)
In 1531, in the cellar of the abbaye of St Hilaire, a monk noticed that the wine he previouly bottled and carefully plugged with a cock started to fiz. There's bubbles in the wine of Limoux! The first 'Brut' of the world is born from this vignard and fate.
Corbières
The Corbières, beautiful and wild, in the hart of the Aude, between the Pyrennées and the méditérranée, it is 3000 km² of tourmented landscape and history. Its history is marked by the construction of the abbey of Lagrasse which grew for several centuries and spread its empires far from the limits of Languedoc.
